At Palmer Bread Co., I care deeply about the ingredients that go into everything I bake. When you’re making bread and pastries by hand, the quality of your ingredients truly matters — and flour is at the heart of it all.
That’s why I’m so excited to spotlight Central Milling in Petaluma as part of this locally sourced ingredient series.
One of the things I appreciate most about Central Milling is the way they talk about baking as a partnership between the farmer, the miller, and the baker. That idea really resonates with me. Great bread doesn’t start in the oven — it starts with carefully grown grain, thoughtful sourcing, and a milling process designed to bring out the best in every bake.
Central Milling emphasizes that quality starts at the source, and that commitment shows in the way they work directly with farmers and carefully mill grains for flavor, performance, and consistency. As a small bakery, those things matter so much. And of course, I love that they have a presence right here in Petaluma. Supporting local and regional food systems is something I believe in wholeheartedly. Being able to source flour from a company with deep roots in the artisan baking world and a local connection here in Northern California makes that relationship feel even more meaningful.
